Opal grew up in her mom’s kitchen in the states of Louisiana, Arkansas and Texas. She learned to grow and cook fresh vegetables, make wine and beer, and prepare mouth watering chicken-fried steak. She was a spirited youth, driving her dad with his hooch during prohibition. She married a restaurateur and opened several restaurants in New Orleans and Houston.
Opal loved to tell tales of the old times in New Orleans where she could actually target practice with her pistol from the top of one of their restaurants to plink bottles on the building across the street. When she wasn’t involved in outrageous endeavors, she was turning out die-for fried green tomatoes, fresh oysters, and her signature deviled eggs.
Opal lived life to the fullest as attested to by the assortment of life long friends including oilmen, circus performers, dancers and an endless array of interesting larger-than-life characters. She would be happy that we have honored her memory at Opal’s Table by featuring some of her favorite time honored recipes.
Please keep her cheerful and fun spirit in mind as you dine with us - and anytime you do something that others may or not approve of! Opal lived an incredibly healthy life and drove herself everywhere in her later years - surrounded by her grandchildren and a large bag of fried pork skins by her side. More than once, she reminded everyone she knew, “Live a little!”
Opal's Table is owned and run by Chip Hight. His first Midland restaurant, Hight Foods, continues to bring fresh, locally sourced, and creative dishes to the community. He opened Opal's Table to bring home-style comfort food to Midlanders in a fine dining experience - with great wine!
